Silky papaya bliss from the tropics
Batida de Lechosa is a thick, creamy smoothie made from fresh papaya (lechosa in Dominican Spanish) blended with milk, sugar, ice, and sometimes a splash of vanilla. The result is a silky, naturally sweet drink with a beautiful orange-peach color that is as nutritious as it is delicious.
Dominican batidas (smoothies) are a category of drinks found at juice stands and cafeterias across the country, made from virtually any local fruit — mango, guanabana, zapote, and guineo (banana) are all popular. But the lechosa version holds a special place because papaya is one of the most abundant fruits in the Dominican Republic, available year-round and incredibly affordable.
Batida de lechosa is popular as a breakfast drink, a mid-afternoon refreshment, or a healthy snack. Dominican juice stands (called juguerías) display their fresh fruits and blend batidas to order, often using combinations of multiple fruits. The papaya-only version is the classic, valued for its smooth texture and gentle sweetness.
Peel the papaya, remove the seeds, and cut the flesh into rough chunks.
Place the papaya chunks in a blender along with the milk, sugar, and a splash of vanilla.
Add a handful of ice cubes to the blender.
Blend on high speed until completely smooth and frothy, about 1 minute, stopping to scrape down the sides if needed.
Taste and add a little more sugar if the papaya is not very sweet, then blend again briefly.
Pour into tall glasses immediately, since the batida separates if left standing too long.
Serve right away, chilled, with a straw.
