“Bizcocho”
The centerpiece of every celebration
Bizcocho Dominicano is the traditional Dominican cake — a moist, dense, richly flavored cake that is the centerpiece of birthdays, weddings, quinceañeras, and virtually every Dominican celebration. Unlike the light, airy American-style layer cake, Dominican bizcocho is denser and more moist, typically flavored with vanilla, rum, and citrus, and frosted with a smooth meringue (suspiro) or buttercream icing. The cake is almost always multi-layered, with fruit preserves or dulce de leche spread between the layers.
In the Dominican Republic, "bizcocho" is synonymous with celebration. The phrase "Hay bizcocho!" (There's cake!) is an announcement that something special is happening. Dominican bakeries (reposterias) are filled with elaborate multi-tiered bizcochos for every occasion, decorated with flowers, figurines, and personalized messages. The craft of Dominican cake decoration is highly developed, and skilled cake decorators (reposterias) are respected artisans in their communities.
Dominican bizcocho follows a specific baking tradition:
Preheat the oven to 175C and grease and flour two or three round cake pans.
In a bowl, cream the butter and sugar together until pale and fluffy, about 4 to 5 minutes with a mixer.
Add the eggs one at a time, beating well after each addition, then mix in the vanilla.
In a separate bowl, whisk together the flour and baking powder, then add it to the butter mixture in three additions, alternating with the milk, beginning and ending with the flour, and mix until just smooth.
Divide the batter evenly between the prepared pans and smooth the tops.
Bake for 25 to 30 minutes, until the cakes spring back when lightly pressed and a toothpick inserted in the center comes out clean.
Cool the cakes in the pans for 10 minutes, then turn out onto racks and cool completely before filling.
Spread pineapple jam between the layers and stack them, then cover the entire cake in glossy meringue frosting known as suspiro, smoothing the sides and top with a spatula.
Decorate as desired and let the frosting set for at least 30 minutes before slicing.
